So over the weekend I prepared a 'demonic' dinner for 4. Pretty easy and fun stuff to make and eat as well. So I'll break it down :)
Menu:
Maple Glazed Carrots
Mushroom Ragout on Garlic Toast
Mashy Capsicum Delight
Cheesy Demonic Chicken
Special Mention: Chocolate Mousse made by Anushka, Fine Vodka & Absinthe by Deepti and dinner music (drums) by Kanika.
Maple Glazed Carrots
Ingredients:
1.Carrots
2. Maple Syrup
3. Olive Oil
3. Salt & Pepper
4. Nutmeg
5. Cinnamon
Preparation:
1. Cut, clean and steam the carrots till relatively tender.
2. Heat the oil and maple syrup in a pan, say it u put similar quantities of oil adn syrup.
3. Throw in the carrots and saute them
4. Remove and season with salt, pepper, nutmeg and cinnamon and then serve.

Mushroom Ragout on garlic toast
Ingredients:
1. Normal Mushrooms, about 2 packets sliced up
2. Butter about 2 table spoons
3. chopped garlic about 2 cloves
4. salt and pepper
5. Thick cream
6. 1/2 cup chicken or vegetable stock
7. You can use a herb of your choice, I used Italian Seasoning mix.
8. Readymade garlic toast or just rub a clove of garlic over a toast directly from the toaster
Preparation:
1. Heat the butter in a pan till hot and frothy
2. Put in the mushrooms, salt and pepper.
3. Keep cooking it for a while, the salt and pepper will get the water out of the mushrooms and you will need to cook it for almost 10 min or more till the water dries out and the mushrooms start to brown.
4. Once its all dried add the garlic and cook for a minute or so.
5. Add the broth/stock and stir in, then add the cream too it and also your herbs
6. Stir it around till it thickens a bit
7. Remove, pour over the toast and serve. I'm sure if you have some Parmesan cheese you can grate or sprinkle it over.
Mashy Capsicum Delight
Ingredients:
1. Capsicums
2. Potatoes
3. Cheese
4. Butter
5. Milks
6. Garlic Salt
7. Pepper
Preparation:
1. Boil the potatoes, cut them in half, scoop out the middle and put it in a bowl. I don't know why but i think its better to do it this way rather than removing the skin and using as is. Don't ask why :P
2. Cut the top of the capsicum and remove all the insides.
3. Mash the potatoes along with the cheese, butter, milk, salt, pepper, garlic and whatever else you'd like in it, be creative :P
4. Put the mashed potatoes in the capsicum and put a bit of grated cheese on top
5. Bake in the oven till brown and serve.
Cheesy Demonic Chicken
Ingredients:
1. Boneless Chicken Breasts
2. Spring Onions
3. Garlic.
4. Milk
5. Wine
6. Salt & Pepper
7. Cream (you can use low fat)
8. CHESEEEEEEEEEEEEE, you can use all kinds.
Preparation:
1. Cut up the chicken breasts, marinate it with salt, pepper, wine and milk.
2. Heat oil in the pan, put in the garlic till it starts to brown after which you put in the chicken till it gets nice and brow.
3. Pour in the cream and grate a truckload of cheese on it and stir it around till you get a nice gravy texture.
4. Serve it!!!
Phew!!! That pretty much takes care of the entire meal, you can serve a nice soft garlic bread with this meal.
